Outdoor portraits apply the same principles as studio portraiture, but instead of a plain backdrop and artificial studio lights you have nature as your background and the sun as your light. Outdoor portraits are inherently less controlled than studio portraits as you are at mercy to the elements and run the risk of getting rained out or shooting on an ugly day.
